Dr. Donald Miller is a cardiac surgeon and Professor of Surgery at the University of Washington School of Medicine. He writes for LewRockwell.com, including his recent piece, “Enjoy Saturated Fats, They’re Good For You!” Dr. Miller’s great article was based on this presentation, which is now online.     Saturated fat (esp palmitic, not SCFAs/MCFAs) can be problematic for the following reasons:
    1) Most saturated fats come from animals. Animal fat can be high in Persistent Organochloride Pollutants (POPs, ie dioxin, PCBs, DDT, dieldrin, toxaphene). POPs are strongly correlated with SyndromeX, Diabetes, etc.
    2) Saturated fats make muscles insulin resistant, thus increasing glucose to other tissues especially those where glucose entry is not regulated (ie cardiovascular lininig, nervous system, eyes, kidney, etc). In adults, who are no longer growing and consuming a high carbohydrate diet (esp refined), the high glucose can cause problems.

    Jay — Don’t give me the etiquette lecture. if that’s what you want/expect, go to Martha Stewart’s website or anything “.gov.” Bullshit will be called out as bullshit here, and if you are too soft to take it, move on.
